CABERNET SAUVIGNON

The most planted variety at Excelsior. Vines vary in age from 5 – 20 years. Water stress is used to produce tiny, concentrated berries.

Tasting Notes:

Appearance: Blackish plum in colour
Aroma: Ripe blackcurrants a plummy fruit. Soft ripe tannins balance toasty oak aromas and sweet fruit flavours.
Palate: Good structure with soft, clean finish

MERLOT

Merlot has a tendency towards green flavours and tannins, so canopy management practices like shoot removal and green harvesting are used to produced and evenly ripened crop.

Tasting Notes:

Appearance: Dark, ruby Colour
Nose: Sweet violet, blackberry fruits and on the nose.
Palate: Succulent flavours of ripe plum and blackcurrant, enhanced by hints of coffee and chocolate. Soft tannins lend a firm structure.

PADDOCK SHIRAZ

Planted on old horse paddocks that are rich in lime and other minerals.

Tasting Notes:
Why Paddock? Vines are planted on old horse paddocks, giving the wine a unique flavour spectrum. Appearance: Deep brick red on rim of glass, almost black in centre. Nose: Smoked meat, mocha, toffee and spicy new wood on nose. Palate:Lingering flavours of vanilla and ripe black cherries with a long and smooth finish.

CAITLYN ROSE

The grapes were healthy at harvest, resulting invery fruit forward wines

This rosé has blueberry notes on the nose, whilst the palate is ripe and juicy, with a nice fresh acidity

SAUVIGNON BLANC

Grapes are harvested by hand for greater quality control. The grapes were immediately destemmed and cooled. Skin contact was maintained for 6 hours, and then the grapes were carefully pressed in order to avoid bitter phenols. The wine was then cold fermented for 15 days at temperatures between 12 and 15⁰ Celsius. Lees contact was maintained for 3 months in order to give greater fullness to the final wine. The various components were blended after ageing

Tasting Notes:

Yellow-green in colour. The nose is complex with passion fruit, grapefruit and ripe fig aromas. The palate is fruity with a zesty acidity.

VIOGNIER

Bright lime green hue. Hints of peach, marmalade and orange blossom on the nose. Green apple fruit flavours on a full creamy palate. Calling Card: Only very lightly oaked for everyday drinking.
